This is a curry made with combination of vegetables cooked in coconut paste.You can use any vegetables of your choice.

Directions | How to make AVVIYAL
1) cut all the vegetables in to small piceses preferably long and thin 2) Boil all the vegetables in water with little salt and turmeric powder 3) Dont over cook the vegetables,should be easy to bite consistency 4) Drain the vegetables and keep it aside,store the drained water aside. 5) Heat the coconut oil in a pan at medium heat and put mustard ,curry leaf 6) Add the cooked vegetables and mix it (dont mash the vegetables) 7) Add turmeric powder,hing and required salt 8) Grind shredded coconut,cumin seeds,garlic ,green chilly and onions in to a paste(little coarse) 9) Add this paste to the vegetables and add the water that was drained from vegetables(very little quantity ) 10) Allow it to cook for a while so that the raw smell goes off 11) Add yogurt and mix it well and allow for 2 minutes 12) Atlast add a drizzle of coconut oil and turn off the stove 13) Garnish with coriander leaves and serve it 14) Goes well with any rice item,chappati,adai
