Directions | How to make Allam Mamidikaya Pachedi
 
1. Cut mangoes in to big chunks ( may be 8 pieces from an average size mango) 2. Take equal amount of ginger ,garlic and paste it ( try not to add water if you want the pickle for a longer shelf line) . However if you planning on keeping it in the fridge you can add water as well. 3. In a pan pour one cup of oil put red mirchi seeds (popu ginjalu) then little fenugreek seeds, mustard seeds, cumin seeds ,few garlic pods and little turmeric, once the spices are cooked then add the ginger garlic paste. 4. In a different bowl pour equal amount of red mirchi powder and then salt ( you can add salt to your taste) and then add 2 table spoons of mustard powder 5. You can also add cumin and fenugreek seeds dry roasted powder.(Optional) 6. Once the mixture comes down to the room temperature mix all the ingredients. 7.The pickle appears to be dry initially, but after couple of days, it will gain its consistency.
Serving Ideas
Goes well with rice, any kind of kichdi,upma and dosa.
