Appricot sounds rather sweet but this recipe has a very nice sour, sweet and spicy taste.

Directions | How to make Apricot Chicken Curry
Cut appricots into 2 or 3 pcs and soak with vinegar or water for 1 hr. Paste 1 - dry roast the onions on a tawa - then grind to a thick paste Paste 2 - Make a thick paste of all the other ingredients except the tomatoes. Heat ghee in a pan, fry the ground onions nicely. Now add the ground masala and fry well. Now add the chopped tomatoes and fry well. Then add the chicken pcs and a little water, cover and cook. Add salt to taste. And cook on slow fire until chicken is nearly done. Add the soaked appricot. cook for another 5 mins more. If you do not use vinegar to soak the appricots - add a bit of lemon juice when you add the appricots.

Serving Ideas
I use half vinegar and half water to soak the appricots, but my mom use to use just vinegar and it taste great too.
Serve with rice or chappti
