Directions | How to make Baingan Da Bhurtha
 
Hold the brinjals with stems over fire, to burn skin. (Or run a few drops of oil, Gently scrub off skin. Mash brinjals to a puree. Make a paste of ginger,garlic, green chillies. Add this paste to puree and mash it and add coriender too in this preparation. it gives little bit greenish color. don't add too much coriander. Heat oil in a heavy kadai. Add Cumin seeds. Add peanuts then add spring onion(finely chopped). You can add small pieces of coconut too. Simmer for five minutes Add puree to it Add salt Add chopped coriander. Serve hot with puri, bhakri, raita etc
