1. Wash potatoes thoroughly .
2. Peel and cut in to stripes 1.25 cm. (1/2'') in length .
3. After squeezing out all water , apply salt and set aside for 10 minutes .
4 . Fry the potato pieces in oil till golden and set aside .
5. Roast red chilliies , fenu greek , mustard and asafoetida in a little oil.
6. Grind along with tamarind to a fine , thick paste .
7. Mix ground spices to fried potatoes and serve immediately so that potatoes remain crisp .
