Beef (choose cut suitable for stir-frying)	grams	250
Cornflour mixed with 100ml Water	tsp	1
Ginger	slice	6
Light Soy Sauce	tbsp	1
Minced Garlic	tsp	1
Oyster Sauce	tbsp	1
Pepper	to taste
Sesame Oil	tsp	1/2
Spring Onion	number	2
Sugar	tsp	1/2

Slice beef thinly across the grain. Tenderize beef slices with a meat mallet. Add seasoning ingredients* to the beef slices and mix well. Cut the spring onions into 5cm lengths. Heat a little oil in a non-stick wok. Stir-fry the ginger and garlic until fragrant. Add beef slices and stir-fry. When beef is almost cooked, add in spring onions & cornflour mixture. Once sauce is thick, remove from heat. Do not overcook beef. Serve.
