Directions | How to make Brinjal Kosthu
 
First fry toordal,chennadal,3 redchillies and coconut without oil. Use blender to make a fine powder. Keep this a side. First fry red chilles then add the chopped onion fry up to gloden brown color. In the another pan fry the chopped eggplant with little oil up to slightly cooked. Then put the fried redchillies, chopped onions salt and a little tamarind in a blender make it a paste after that add the fried eggplant. Take the another pan fry the mustard seeds and add the paste in the pan add little water and turmeric powder . cooked for 10 minutes then add the power which we make first and cook for 5 minutes. Then add corinder leaves and curry leaves.

Its best for chappati , dosa and rice.
