Description : Vegetarian variation of Russian cabbage soup also known as shchi

Directions | How to make Cabbage Soup (Shchi)
 
1. Bring water to boil in a large pot, add salt. 2. Cut cabbage into long thin strips, add to the water, let cook over low heat. 3. Cut onion into small cubes, cut carrot into small sticks, dice tomato. 4. Heat oil in a pan, add onion and cook for 2-3 min. over medium heat, add tomato and carrot and cook for 5 min. Add this mixture to the pot. 5. Add seasoning and dried parsley and dill to the soup. 6. Let it cook for 20-30 minutes. Serve with fresh sour cream, fresh parsley and dill.
Serving Ideas
Goes well with rye bread.
