Description : A lovely oil to dress and flavour most cold dishes like salads and noodles, for instance.

Directions | How to make Chilli Oil (A.K.A. Hot Oil Or Red Oil)
 
Dry roast chillies and peppercorns in a pan till nice and fragrant. Transfer to a little pot and pour in canola oil. Heat over medium-low/low heat for about 30 minutes to fully extract flavour (I usually start with medium-low heat and half way through the cooking process, I'd switch to low heat). At this point, your oil should have turned red (with an orange hue). Add the sesame oil and heat for another five minutes or so and it's done. Oil stores well in an airtight glass container when kept in dark and cool spot. Of course, you could mix up different kinds of dried chillies for a different flavour if you wish.
Serving Ideas
Dress your cucumber salad or perk up your cold noodle or tofu dish with this oil.
