Directions | How to make Easy Gutthi Vankaya
 
For Stuffing: Take ginger, garlic, green chillies and cumin & coriander powder and make a paste in a blender (do not add water). Cut the eggplants in the middle on all sides. Then stuff the paste in eggplants in such a way that the paste doesn't come out of the eggplant. Heat oil in a pan and add all the eggplants and fry them until they are golden brown (for 10 minutes approx.). Take another pan and heat 2 tbsp of oil and add chopped onions, curry leaves and turmeric powder and cook them till they are golden brown. Then add the fried egg plants and cook them for 5 minutes. Garnish them with chopped cilantro and enjoy!
Serving Ideas
Can serve as main dish or with plain rice.
