Ingredients used in Egg Bhaji
• Eggs - 6 number.
• Garam masala - 1/2 tea spoon.
• Red chili powder - 1 tea spoon.
• Haldi/turmeric powder - 1/2 tea spoon.
• Coriander leaves (chopped) - to taste.
• Onions (chopped) - 2 large.
• Ginger (sliced) - 1 numbers.
• Green chilies (chopped) - 3 numbers.
• Tomatoes (chopped) - 2 numbers.
• Salt - to taste.
Method:
  • Slice the onions, chilies, ginger lengthwiseand fry in kadhai until onions are golden brown.
  • Dice tomatoes into small pieces and add this to onions. Cook for about 5 minutes.
  • Add all the powders (red chili powder, turmeric powder, garam masala powder) and cook for another 5-6 minutes.
  • Halve the boiled eggs and add to mix. Mix eggs and masala gently until eggs are nicely coated with masala.
  • Cover and cook for another 10 minutes on medium flame.
  • At last, garnish with coriander leaves and serve.
