1. Boil and peel the potatoes. 2. Wash other vegetables and cut them in longish strips. 3. Heat groundnut oil in a pan and add turmeric powder ,vegetable strips. potatoes and salt and cook on a very low fire ., stirring at intervals . 4. In a separate vessel ,heat remaining oil and roast chillies ,fenugreek . Mustard seeds and asafoetida . 5. Grind the roasted spices into a thick paste . 6. Add the spices to vegetables when they are tender and simmer for another 10 minutes . 7. Remove from the fire and add lime juice and mix.
