Directions | How to make Kaju Katli
 
Take a nonstick pan with the water and sugar and heat it on medium flame. Grind the cashew into a fine powder. When the sugar water starts boiling well, add the cashew powder and keep stirring continuously for a few minutes. The mixture will slowly thicken. When it appears to be like a thick starch consistency, take a small bit in your hand and see if you are able to shape it with your hand. Be careful, it will be hot!(You should be able to mould it like clay). If you can, then take the pan off the heat and pour the contents into a wide plate or baking tray which is greased with Ghee. When the mixture is cooled slightly. you will be able to roll it into a sheet with a rolling pin. Cut diamonds and your kaju katlis are ready.
Recipe Tips
If you like the taste of saffron, dip your kaju katli in saffron water before serving. They remain moist and taste delicious!!!
