1, Boil 4 cups water with 2tsp salt. add arbi to boliing water. after the boil come again, cover and cook for about 12 minutes till arbi is down. 2,Drain. cool the arbi and peel it. 3, make a lengthwise slit in each arbi. 4, mix all ingredients of the masala, including the oil. the oil binds the masala. 5, fill about 1/4 tsp of masala in each slit with a spoon. press the arbi to flatten it slightly and also to close the slit. 6, repeat with all the pieces and keep the left over masala if any. 7 Heatoil for frying. 8, mix the coating ingredients in a flat plate. 9, sprinkle some water on the stuffed arbi pieces. 10,Roll each piece of arbi in the dry suji besan mix and deep fry 5-6 pieces at one time on medium heat till golden. drain on absorbent paper. 11. sprinkle the leftover masala or some chat masala and serve hot
