Directions | How to make Karela Fry (Kakarakaya)
Peel of a little skin on Karela. Cut the Karela into round thin slices. You have to remove the seeds so that u will only have the outer part of Karela. Soak the pieces in salt water for an hour. Cut the onions into thin long slices. U can use garlic paste or if u have the patience cut the garlic into very small cubes. (It really tastes good if u cut them). Squeeze out extra water from the water and put them on a paper towel until they are pat dry. Heat oil in a pan to fry the Karela pieces. Fry the pieces in small amounts until the pieces are golden brown. Take them out and put them on a paper towel. Fry all the pieces like this. Fry the chopped onions until they are golden brown, remove them from the pan and put it on a paper towel. Like this slightly fry the curry leaves also. Now heat the oil (enough to fry the garlic). Add cumin and mustard seeds. When the seeds are spluttering add garlic. When the garlic is golden brown add the fried onions. Now add the fried Karela pieces. Mix it well add salt and coriander or garam masala powder. Let the curry comes to the room temperature. Have this with Dal. It really tastes good.
