Directions | How to make Kerala Chicken Curry
 
1. Marinade the chicken pieces with chilli powder, coriander powder, garam masala powder, turmeric powder, ginger garlic paste and vinegar for about 1 hr. 2. Heat the pan. Pour 2 tbsp of coconut oil. Add onions, mint leaves, green chillies, curry leaves, chopped garlic flakes. Fry for about 2 mins. 3. Add the marinade chicken into the pan. Nicely saute to mix the marinade with the onions, mint and curry leaves mixture. cook the chicken in low flame till the raw taste goes off from the powders. The chicken oozes out some water. Add salt. 4. Add coconut milk and let the chicken cook for about 15-25 mins with the lid covered. Remove the lid and add tomatoes. Cook for another 5 mins. 5. Now add the remaining 1 tbsp of coconut oil on top of it and switch the stove off. Serve hot. 6. This goes well with Peas pulao, shahi pulao and Naan.
