Directions | How to make Korean Style BBQ Marinade.
 
I usually make this marinade inside of a 20oz plastic cup. First measure out 1/2 cup of dark brown sugar. Instead of practicing good measuring technique, pack the sugar into your measuring cup and flatten it out with a butter knife. Put the sugar in whatever container you're using. Add 1/2 cup of soy sauce. Personally I use reduced sodium soy sauce, but use whatever you like. Add 1/4 cup teriyaki sauce. Add 1/4 cup olive oil. Add 3/4 cup sesame seed oil. Crush/chop your garlic and add. Stir your mixture. It will look either brown or dark brown depending on the brand of sugar you used. You should be able to see the sugar crystals. They will look like glitter. Marinate either beef or pork with this mixture. I usually use 1/3-1/2 the volume of your meat. I mostly use this for short-cut ribs or any other steak that's about 1/2 inch thick. I marinate 12 short-cut ribs per recipe I make. When you marinate, use a small secure container such as plastic ware or plastic zip lock bags. I use a vacuum sealing system. Try not to leave any air in your container. You don't want the pack the meat into your container. It's better for it to be somewhat free floating for maximum penetration. For best results, marinate 2 nights. Just overnight is still fine. The important thing to do is to turn over the container every few hours. If you don't turn it over, some of your preparation will turn out very bland. After the 2 day period, you can freeze the meat for later use without adverse effects. Preferred method of cooking is grilling. When grilling there's a very good chance the meat will catch on fire which is fine. Usually when you cook to well done, the meat will later turn into a darker color from the sugar caramelizing. Other methods of cooking are broiling or frying in a frying pan.
Recipe Tips Serving Ideas
Add the sugar then the soy and teriyaki sauces. If you add the oil after the sugar, you'll have trouble getting the sugar to dissolve. Do not forget to flip your preparation. Best for BBQ. Impress your friends and family.
