Directions | How to make Kutchi Briyani
Wash and soak rice for half an hour.Cut the meat into large pieces.Marinate the meat in garlic, ginger, curd, green chillies and salt for atleast 2 hrs. Heat oil and fry the onions till golden brown. Remove and spread on a plate to cool. In a thick bottomed vessel pour 2/3 ghee and spread the marinated meat. On top of this add the crushed fried onions, coriander leaves, mint leaves and lemon juice. In another vessel boil 3 litres of water with salt. Add the drained rice to it and cook till half done. Spread Rice over the meat, sprinkle the milk with saffron and add the remaining ghee. Seal the vessel with a damp cloth to keep the steam intact. Cook on high flame for 10-15minutes, till the steam escape fcrom the sides. Transfer the vessel to a hot thava and continue cooking till the steam escapes from the sides. Lower the heat to minimum and cook for 45 minutes.
