1.simmer cleaned fish in salted water for 40 minutes. 2.drain and remove backbone. place in a hot dish. 3.sprinkle with capers and grated cheese. 4.cover with black butter sauce and serve with boild potatoes. black butter sauce 1.melt butter and cook untill it becomes brown (not black)and pour over fish. 2.swirl pan with vineger.reduce to half and pour over butter.
