Directions | How to make Maharashtrian Mutton Russa
 
You take 1kg of mutton and wash and then marinate it with ginger, garlic and coriander paste. Then after some hours, you put oil in the pan and then put finely chopped onions to it and then saute the marinated mutton and let it cook for a while. Then the most important thing for this dish is the mixture of spices, so for that u need finely chopped onions, dry coconut powder, ginger, garlic and coriander( if u want to have a good red color to your curry then u should not add the coriander to this mixture) and then roast the onions till they become really brown and then roast the coconut power both separately and then add them together and roast again. Then put it in the mixer and and add ginger, garlic to it. Then once your magic mixture is ready, put oil in the pan,put whole garam masala, some chopped onions and then add the mixture to it and saute till the oil comes out. Then add the garam masala poweder and red chilli powder(in maharashtra in many houses women make this garam masala at home which is made up of roasted red chillies, roasted dhania seeds, cloves, black pepper, two types of cardomom, more of black cardomom, dagadful, bay leaves, and shahi jeera. i hope i have put them all) This masala we add in daily cooking, so add this masala and then fry it well and put the another mixture to it that we had separately with mutton. Remember to put a little more water to the mutton if you want to have a lot of curry, because this stock is very tasty and you can have it just like that also.SO now you wait for another half an hour till the mutton cooks well and absorbs all the masala to it. So then once it is well cooked, you remove it from the heat and add fresh coriander leaves to it. This mutton tastes very well with Jowar Bhakari or roti. Wow i am already getting a craving, but Chef you must try it!!!!
Recipe Tips
To have a good color, do not add the coriander to the mixture of spices and add it at the end.
