Description : This is a curry which my grandmother use to make whenever there are special gusts and on our special request and now my mother is holding the pleasure of making this mouth watery curry.

Directions | How to make Masala Kutan
 
Fry all the vegetables(except small onions) in oil just to make it soft or just let it change its color. just fry the onions with 1 spoon of oil till it changes its color. Fry the coriander seeds along with red chillies and grinde them to a fine paste, use the coconutmilk instead of water. In a heavy bottomed pan or rice cooker add all the fried vegitables thin coconutmilk fenugreekseeds (4-5) and the grinded masla and allow it to cook in medium flame for a while (unless the curry gaining a good consistency). Pour the Thick coconutmilk to this curry and turn off the stove. Fry 4-5 fenugreekseeds and 2-3 red chillies and add to the curry. (curry leaves can also be added) {[If you like the taste of garlic it can also be added fried along with the small onions (not more than 2 flacks other wise traditional taste wont be there)] Any vegetable can be added to this dish which can adopt the taste of the masala very well and not having a strong flavor of its own, not vegetable like drum sticks} Can you please make and show this dish as just explaining this dish wont be sufficient. (nothing but papadams will be the best accompaniment).
