Typical Maharashtrian recipe made with fresh coconut and jaggery flavoured with cardamom powder popularly known as Narali Bhat (sweet coconut Rice).
Clean and wash rice. Soak rice in water for 15 minutes and drain the water and keep aside. Add 1 tbsp ghee in a hot pan, add ground coconut paste and sauté well for few minutes. Add the soaked rice, raisins, cashew nuts and pinch of salt (it increases the taste of sweet dishes). Mix the entire ingredients and sauté the rice nicely. Add hot water and allow the rice to cook. When the moisture get slightly reduced, add powdered jaggery, cardamom powder, cover and cook over a slow flame until the rice is completely done. Narali Bhat is ready to serve.
