1.chop up onions and leeks and put them in cold water.
2.add well-crushed garlic,thyme,saltand pepper.
3.put lid on pan and boil for 20 minutes.
4.put in a pinch of saffron and olive oil and boil for another 5 minutes.
5.carefully break each egg into this soup and let it poach,removing each when it is done.keep warm.
6.fry each piece of bread crisply brown in olive oil.
7.warm 4 deep,wide soup plates.place a piece of bread in each, an egg on each piece of bread and pour soup over.
