Directions | How to make Oligalu Bhakshyalu
 
Soak split chana dal for 6 hours. Make dough with maida. Add a pinch of salt and make a soft dough and keep it aside. Boil the soaked chana dal till they become light soft. Drain the water keep it aside to cool. with this water you can prepare rasam. Grinda the boiled chana dal with jaggery in a mixer. Do not add water. If the mixture is watery, keep it in a thick bottomed vessel and heat till it becomes thick. You should be able to make round balls with it. Add cardamom powder to this mix. Now make the dough into small balls in equal proportions. Bhel each ball like puree and stuff with the a spoon of chana dal-jaggery mix. And then bhel the ball like how you do for paratha. We call them as oligalu or bhakshyalu. Now fry them on a chapathi pan with lots of ghee. Serve them hot or cold. This is a Ugadi special sweet in Andhra Pradesh. Fry these

Do not pressure cook the dal. Adjust jaggery as per your sweet levels.
