Directions | How to make Onion Masala
Hi Sanjay , I want to tell u abt onion masala which can be refridgerated and can be used to make many diff curries. For all my cousins,myself and mysister who stay in USA mom used to prepapre this and give ,its like instant masala for us to make any kind of dish by adding diff vegitable to it. Onion Masala Prepration Ingradients Onion- depending upon how much masala u want to prepare Salt-to taste Chilli powder-depend on how much u eat garam masala Dhaniya powder zeera+methi powder-very little termeric powder oil-to fry onions ginger garlic paste and last but not least very impis the curry leaves How to prepare? Take a pan heat oil in that which will be sufficient to fry the onion now add the cubbed onions into the pan and fry until the onions turn slightly brown in color now put these onions in to the mixer and add salt ,chilli powder,garam masala,termeric powder,dhaniya powder,zeer+methi powder,ginger garlic paste,curry leaves and make it into paste. thats it its ready and now u can refridgerate this paste. how to make diff curries? we can make tomato masala,brinjal masala,egg masala,dondakaya(donno what we call in eng),ladies finger masala,birakaya masala,fish curry,mirchi masala and many more. by adding some more ingradients to the above prepared onion masala we can prepare all these mentioned curries Tomato masala- Onion masala Tomatoes-not the ovel tomatoes wee need round and medium tomatoes curry leaves cilantro for garnishing little coconut powder oil take the tomatoes wash them and just remove the top black portion and just scoop the seeds from inside and make it hallow like a bowl and keep the tomatoes aside and the seed and the juice which u have scoopeda sidewe need the seeds and juice dont through it away. now take a pan add oil and 2 to 3 table spoons of onion masala and fry it till it is nice brown in color-TIP-till oil leaves the edges now at this moment add curry leaves and the tomato seeds and juice stirr till it is mixed well with masala and now insert the tomatoes and put some masala inside the hallow hole and now at this moment put the lid and allow it to cook until the tomatoes r cooked and now see the taste no need to add any chilli powder or salt all r added in masala only but see the taste and add salt if needed and finally add coconut powderand cilantro finish . its very simple. brinjal masala onion masala brinjals-small ones coconut powder peanut powder tamarind juice pinch sugar oil take brinjals cut it as usual as u cut for masala and fry them in oil and keep it aside. now in thta same pan add little more oil and put the onion masala and little peanut powder and fry till oil leaves the edges at this moment add curry leaves and add tamarind juice let it boil and nowadd some salt if neededsince we added tamarind juice and now insert the fried binjalsand keep the lid let it cook for 5 to 7 mins and now add coconut powder ,pinch of sugar and cilantro . its ready . Egg masala- same as Brinjal masala but we need boilled eggs same as it is no change in the prep. Mirchi masala- same as brinjal masala but we need chillies which are a bit fat need to remove the seeds and fry them in oil and instead of peanut powder we need to add nuvvu podi (nuvvula powder) and every thing is same. Fish curry- same as brinjal masala but here we need to fry the fish first and keep a side. here we can use tamarind juice or we can also use grated mango (instead of tamarind juice)which will be very very yummy .and procedure is same as Brinjal masala--IMP -dont add sugar in this curry . Dondakaya,birakaya,Ladies finger -this is exactly same as Brinjal no changes one of my favourite dish is Egg masala without tamaring juice it is a kind of fry Ingradients eggs-not boilled but raw egges Onion masala curry leaves cilantro Take a pan put iol and fry 3 to 4 table spoons of onion paste until the iol leaves the edges now at the eggs beat them and add to the masala and keep on mix the masla so that u no more see any egg like it should be mixed with masala and nicely fry the masala till again u see the oil leaving the edges no more raw egg smell comes from the masala and if we show it to some one they will not know that its an egg curry becoz the eggs are nicely mixed with the masala and now u add the curry leaves and cilantro to garnish . this dish my mom makes which i like the most ,it tastes very gud u know but we shoul stil so that it wont get burnt because we r not adding any liquid to it. thats it its ready . this is the masala which mom sends when ever someone come s to US and it can be refidgerated for months to say we will use it for an yr ,its very easy way ,we can also prepare this masala and store it but for preparing all this dishes we dont need to add any extra ingradients except salt if needed because we have already added enough in the masala. hey sanjay these r some of the Dishes i wante to share , I like to see ur cooking videos and they r very helpful Thanks and regards Archana
