1. wash gourd . Cut it into 3.5 cm pieces . Cut in to half and remove seeds and white pith .
2. Slice into fingers about 0. 25 -0.5 cm thick .
3. Crush red chilies .
4. Mix gourd pieces ,chillies and salt and barely cover with water .
5. Cook till gourd is tender and no moisture remains .
6. Heat oil . Fry cooked gourd .
