1.soak prunes overnight. drain. cover in cold water and bring to a boil.
2.continue boiling for 7 minutes.
3.peel apples and slice finely. place in a saucepan with 60 gm of butter and cook gently for 1 hour,taking care that apples do not stick or burn.
4.press through a seive and keep warm.
5.season and roast loin of pork for 1 1/2 hours in a moderate oven with 30 gm butter.
6.slice cooked pork.place in an entree dish.
7.surround with prunes and serve apple sauce separately.
