Directions | How to make Stuffed Brinjals
 
Give four vertical slits (not fully) to the brinjals and put them in salted water for about 10 mins.Rinse and set aside. Roast dry coconut,seasame seeds till they are light brown. Add roasted coconut,seasame seeds,peanut powder,cumin-coriander powder,chilli powder,half of ginger garlic paste,goda masala,and some salt to the grinder.Make a paste of all these ingredients by adding some water. Stuff all the brinjals with the grinded masala paste. Heat oil in a thick base pan(kadai).Add the mustard seeds and let them splutter. Then add finely chopped onion.Sprinkle some salt in it. Add chopped green chilli,asafoetida and curry leaves. When the onion is translucent and light brown, add remaining garlic ginger paste.Fry for a few seconds and add chopped tomato,turmeric powder.Cover and let it cook till the tomatoes are cooked and smashed. Add the remaining masala paste which we stuffed in brinjals.Let it fry for few mins then add the stuffed brinjals.Gently fry the brinjals for about 5 mins. Then add 1 cup water. Cover and cook over low-medium heat for about 15-25 min or until the brinjals turn soft and completely cooked. Garnish with coriander leaves. Serve hot with chapati or rice.
Recipe Tips
You can add more green chillis or chilli powder,if you like it spicy. You can also add slit potatoes when you add the brinjals.
