1.Grate coconut.extract thick milk and set aside.add water and make a second extract.Add more water and make a third exract(altogether about 10 cups).
2.clean and cut meat into small cubs.cook in the third extract with salt and lemon grass stems,sliced ginger and curry leaves.
3.when the meat is nearly done,add second extract.cook till meat is tender. add chopped spring onion, coriander leaves and crushed chillies. add first extract of coconut milk and lime juice.
