Description : My version of typical, famous thai chicken curry.

Directions | How to make Thai Chicken Curry
 
cut carrot into thin sticks finely chop onion and garlic cut paprika into strips Add the chicken to a drop of oil, don't fry them completely. Add touch of salt and pepper. Move the chicken to the perimeter of the pan, and add in carrots, onion, garlic and paprika in the middle. Let vegetables sauté for a moment. Mix in the chicken with the vegetables and add in lime juice, fish sauce, curry paste, and the chicken stock. Mix thoroughly. Add in coconut milk little by little, to avoid the pan cooling down too much at once. Add in the chili-spice mix, curry, ginger and mix again thoroughly. Cover with a pan and let it simmer for a few minutes on low heat. Finally add some finely chopped cilantro if you like. Serve with Thai jasmin rice.
