This curry is famous in the brahmin sect of telugu people. This is a mild , easy to cook curry. As said BRINJAL is the king of veggies !!!!

Directions | How to make Vankaya Kotthimeera Kaaram Koora
1. Take the eggplants in a pan and wash them . 2. Slit the eggplants vertically from head to end and keep aside.Soak them in water. 3. Wash the bunch of coriander , ginger & green chili. Grind them all together in a mixer. Add a little salt. 4. Please note that it shall not become a very fine paste. Look that we can see parts of green chili as pieces. 5. Take a pan and put some oil..probably 3-4 table spoons of oil. Better to use groundnut oil , it tastes good !!! 6. After the oil gets heated , put the slit eggplants into it. Cover the pan with lid. 7. Let the eggplants fry a little. 8. After 5-8 mins , add the masala paste and mix thoroughly. 9. Add salt to taste & 2-3 table spoons of oil. 10. Cover the pan with lid & cook it till the oil seperates. And the curry gets ready. It is served best with rice. Hope you all like this curry !!!

Serving Ideas
If ground nut oil is used, it adds more taste. The egg plants shall be fresh ones. Both purple & green eggplants go well with the recipe.
Its best when served with rice !!!!
