Description : Similar to Tomato Chuney on vahrehvah.com. Add some carrots, Capsicum, some onions (optional), curry leaves along with tomatoes while cooking. Tastes great with idli, dosa, etc and very healthy too.

Directions | How to make Vegetable Chutney
 
Prepare seasoning similar to tomato chuntney recipe shown on vahrehvah.com. Add tomatoes, capsicum and carrot. Let the vegetables cook. Add curry leaves at the end and grind them together. Another variation is - dry roast some urad and channa dhals. One to 2 table spoons each. Add them while cooking vegetables (do not fry again in oil... just add after adding the vegetables). Grind after vegetables are cooked. It makes Chutney little thick. Tastes good with rice, chapathi, idli, dosa, etc.
