Drain the beans which have soaked in cold water for at least 12 hours, Replace the water and boil until tender, 1 1/2 - 3 hours. Fry the onions and garlic in the oil or butter until softened. Add the chopped tomatoes and simmer for 10 minutes. Add the remaining ingredients beans, plus one cup of their cooking water. Stir to mix well, cook another 15 minutes. Serve hot or at room temperature.
