-bake the egg plant ,tomatoes and 5 pieces of galic in oven at 375 f for 45 minutes or till done ( In India we put it directly on flame till it gets charred.Remove the tomatoes and garlic before or they will be burnt -let it cool, remove the skin of egg plant and tomatoes it gets off easily. -mash the eggplant,tomatoes,and garlic with hand.( remove chunks of fiber that get entangled in your hand.make it smooth like salsa -add finely gut green chilly,coriander leaf,5 pieces of raw garlic finely cut,salt to taste lemon juice serve it with chapati or paratha at room temperature
My Grandmother use to make it in clay oven in Patna we all circled around her to taste the salt , now i make the same thing in a electric oven In USA but still cannot get that taste not even when I grill the eggplants on a charcoal grill in summer. when I serve It to my american Friends they love it and call it eggplant salsa.
