Description: Beerakai/ Turai/ Ridge gourd chutney is the sweetness of the ridge gourd perfectly complimented with the hot and sour flavors of onions, chillies and tamarind. To give a nutty flavor, cashew nuts and roasted channa dal can also be added. The Chutney will be a perfect side dish with hot rice, roti, chapatti etc.


Recipe of beerakai chutney

Ingredient Name Quantity Unit
Hing 1 Pinch
Onion 1 Small
Chooped Gr Chilli 2 Numbers
Salt 1 Pinch
Curry Leaves 1 Springs
Mustard 1 Teaspoons
Cumin 1 Teaspoons
Frychannadal Or Cahsew 1 Tablespoons
Tamrind 20 Grams
Oil 2 Tablespoons
Turai (berakai) 1 Numbers

Directions

  1.  cut turai into samll peices , add oil in a hot pan,fry in low flame all ingredients one after another then mix all of them and grind to the required consistency ,
  2.  you can also make chutney with the skin alone when making torai as subzi temper the chutney season and enjoy with hot rice and ghee

This came out great! The only thing is the print recipes need to be more thorough and carefully written. For ex: the video talks about garlic but there is no mention of garlic in the print recipe. This can really confuse a first time cook.
