Take the bitterguards, wash it and cut into very thin slices. No need of removing the seeds. Take the slices in a bowl and add all other incredients except the oil. Don't add water. Mix the incredients with bitter guard and keep aside for 5 minutes. Heat the oil in a pan and deep fry the bittergurads until crispy. Don't burn it to dark brow.
This will be taken as a side dish for sambar rice.
