BRINJAL AND SHALLOTS CHUTNEY

Ingredients used in BRINJAL AND SHALLOTS CHUTNEY
• Big eggplant(pieces) - 1/2 number.
• Oil - 3 teaspoons.
• Coriander seeds - 1 tea spoon.
• Garlic - 5 cloves.
• Dry red chili seeds - 1 tea spoon.
• Dry red chilies - 10 numbers.
• Tamarind - 4-5 pieces.
• Mustard seeds - 1/2 tea spoon.
• Cumin seeds - 1/2 tea spoon.
• Urad dal - 1 tea spoon.
• Chana dal - 1 tea spoon.
• Shallots - 1/2 cup.
• Curry leaves - 1 spring.
• Salt - to taste.
• Water - as required.
Method:
  • Heat oil and add coriander seeds, garlic, red chili seeds, dry red chilies, tamarind and saute it for 2 minutes.
  • Add water and cook it for 2 minutes and transfer it to a blender and blend it into a smooth paste.
  • Heat oil in a pan and add mustard seeds, cumin seeds, urad dal, chana dal, shallots, curry leaves, eggplant, salt and saute it.
  • Place the lid and cook it for 2 minutes.
  • Add the smooth paste and mix thoroughly and cook it for 2 minutes.

Now the brinjal red chilies shallot chutney is ready to serve with roti or chapati.
