You CAN bake a cake in a typical on/off style rice cooker. Grease the cooker with butter/shortening/or oil. Put a circle of greased parchment paper in the bottom. Now you can make an upside-down cake by putting your butter, brown sugar, nuts, etc. in. Then you can use a Jiffy cake mix, or you can use 1/2 of a regular box cake mix (I used Duncan Hines yellow cake mix, and 1/2 of the oil, eggs, and water usually required.) Pour the batter into your rice cooker. Spread it evenly. Then cover with your lid. Bake 40 minutes. Lift lid, being careful not to drop water on your cake. Invert a small plate into the cooking well. Tip the well and plate and your cake will come out onto the cake. Remove the parchment paper. Let cool a bit before serving.
