CREAM OF FRESH MUSHROOM SOUP

Ingredients used in CREAM OF FRESH MUSHROOM SOUP
• Leeks chopped - 1/2 cup.
• Thyme - 1/2 tea spoon.
• Flour - 1/2 cup.
• Sugar - pinch.
• Salt - to taste.
• Chopped onions - 1/2 cup.
• Chopped garlic - 1 tea spoon.
• Mushrooms chopped - 1 cup.
• Chicken stock - 3 cups.
• Butter - 1 tablespoon.
Method:
  • Heat butter in a pan, add chopped garlic, chopped onions, mushroom, salt and saute them.
  • Then add pinch of sugar, cook for till mushrooms are slightly golden in color on slow flame.
  • Add dry thyme, flour, chopped leeks, chicken stock, boiled for 10-15 minutes, once cooled blend and transfer in to the same bowl.
  • At last, condition the cream with some hot soup and add it into the soup.

Chef, when the soup is finished, add a good amount of dried mint (spice) at the end. Make sure to add it at the very end, otherwise mint wil become black, it should stay green in the soup.
