Ingredients used in eggplant ullikaram
• Mustard seeds - 1 teaspoons.
• Jeera - 1/2 tsp teaspoons.
• Ginger - 1 inch small.
• Dried red chillies - 2 numbers.
• Curry leaves - few numbers.
• Coriander leaves - a small bunch bunch.
• Cloves,cardamom powder - 1/2 teaspoons.
• Chillies - 2 numbers.
• Channa dal - 3 tablespoons.
• Urad dal - 2 tablespoons.
• Eggplant - 4 small.
• Oil - frying cup.
• Onions - 2 large.
• Salt - as per taste to taste.
• Turmeric powder - 1/2 teaspoons.
Method:
take 2tbsp of oil in a pan.add urad dal,channa dal,cloves,cardamom powder,curry leaves,dried red chillies,ginger,jeera,mustard seeds,chillies,onions,salt,turmeric powder,salt fry them little bit and make them into a fine paste.now wash eggplant cut them (cut them as baigara baingan) now shallow fry them by adding little salt.when it is soften remove them.now remove oil by leaving 2 to 3 spoons of oil in kadai now add the above paste till it fries and omits oil out now add eggplant and stir them. finally add finely chopped coriander leaves.serve hot with rice.
