Aloo Gobi Ki Tahari is a one pot scrumptious meal; vegetables cooked with rice. An amazing dish, simple to prepare and a reliever dish that saves time, fuel and cleans up all in a breeze. It can be slighty similar to Pulao but normally double the quantity of veggies is added to the rice. Aloo Gobi ki Tahari is a unique dish, fast to cook, very flavourful, nutritious and balanced meal. Tahari can be said to be a cousin of Biryani. Tahari is a complete wholesome, balanced and nutritious meal for the whole family which is often cooked in most Hyderabadi homes. This rice preparation is different from the Biryani or Pulao but the process of cooking is simplified and fast to prepare. Generally while preparing the Biryani, the meat masala and rice are layered and cooked on dum (slow heat) in one pot whereas in Tahari, first the meat or vegetables are slightly cooked, water is poured to the meat and then rice is added and cooked along. There is no process of layering the meat and rice in Tahari. There are many ways of making the Tahiri adding desired choice of meat or vegetables.  Tahari is often made with Kheema. Vegetables like potatopeas, cauliflowercarrot and beans etc goes well in Tahari rice. Some of the traditional and exotic Tahari recipes are Aloo ki Tahiri, Keema ki Tahiri or Gosht ki Tahiri.
