Fry saunf and jeera (cumin seeds) separately, powder and keep aside. Scrape the coconut and grind to take the first milk of minimum two cups of coconut milk and then remove another two cups of second milk and keep aside. Grind the roasted coriander seeds and dry red chilies to fine powder and keep aside.
Heat oil in a pan and put the fenugreek seeds and chopped small sambar onion. Fry them well till the onions turn golden in color. Add coriander and red chili powder to the onions and mix well. To this add meat cut into equal sized cubes. Add salt to taste turmeric powder and pour the second coconut milk, mix and cook well. Once meat is cooked add the first (thick) coconut milk and let it simmer till it thickens. Sprinkle saunf and jeera powder. The consistency of the gravy should be thick and finally garnish with fried finely chopped small potatoes and coconut pieces.
