This mutton masala curry is exotic to taste with aromatic flavors and is widely known for its striking spices making it special. Chettinad recipes are incomplete without the simple and tasty mutton gravy prepared in Chettinad. The chettiar ladies are known for making tasty dishes with very few and small quantity of ingredients. This Amma curry is a simple dish where mutton pieces and cooked in coconut milk along with spices. This dish is popularly prepared all over south India especially Kerala, Mangalore and Tamil Nadu.

Amma curry is a mouthwatering spicy dish cooked in South Indian style and serves excellent with chapattis, parathas, idly, dosa, biryani and fried rice. It makes a delightful and a hearty meal. Amma curry, mutton curry with flavors of sweet coconut milk and does not make it a very spicy but very delectable as the coconut milk blends well the spices. Curry is a generic description that is used to describe a variety of dishes throughout India, Bangladesh, Pakistan, Sri Lanka, Thailand and South Asian countries.  The three most found spices in curry are turmeric, coriander and cumin and a wide range of additional spice may be included depending on the geographic region and the foods being included.

The word ‘curry’ is analogous to soup or stew. Curries prepared in south India generally contain coconut paste or coconut milk, curry leaves and various other spices. Mustard seeds are used in almost every dish along with onions, curry leaves, sliced red chilies fired hot oil and most of the non-vegetarian dishes are heavily spices. Amma curry has the unique flavors and taste from the south Indian cuisine. Normally for making authentic masala, spices are freshly ground and then added to the curry as it makes the dish aromatic and taste excellent.

For preparing this delicious Amma curry, fry coriander seeds and dry red chilies till they turn dark brown. Ensure you don’t burn them. Fry saunf and jeera (cumin seeds) separately, powder and keep aside. Scrape the coconut and grind to take the first milk of minimum two cups of coconut milk and then remove another two cups of second milk and keep aside. Grind the roasted coriander seeds and dry red chilies to fine powder and keep aside.

Heat oil in a pan and put the fenugreek seeds and chopped small sambar onion. Fry them well till the onions turn golden in color. Add coriander and red chili powder to the onions and mix well. To this add meat cut into equal sized cubes. Add salt to taste turmeric powder and pour the second coconut milk, mix and cook well. Once meat is cooked add the first (thick) coconut milk and let it simmer till it thickens. Sprinkle saunf and jeera powder. The consistency of the gravy should be thick and finally garnish with fried finely chopped small potatoes and coconut pieces.
