Banana Dosai
 Banana dosai is soft smooth dumpling like pancake spongy in texture and very delicious to taste.  Banana dosai can be eaten as a dessert, snack and appetizer or for breakfast. It is a dish that has the right nutrition and is very healthy too for kids especially growing kids. This dish could also be prepared as sweet dessert for festivals and a preferred sweet for Diwali.
Banana dosa pancake looks crispy on the exterior side and spongy interior. Banana dosai is completely different from a normal dosa and also a sweet with difference than other normal sweets. Banana dosa pancake comes under the class of Indian foods. As the state of Kerala is abundance in plaintains, the banana dosai is similar to the banana fritter or the payam pori a common snack in Kerala.
Banana as such is a fruit that is natural and unique which is said to be offered during auspicious poojas and festivals. The banana dosai is prepared of ripened bananas that has its natural sweetness and is loaded with nutrition, low in sodium and high in vitamins and fiber. It’s truly a pure vegetarian sweet.
Banana dosai is popularly prepared in the states of Kerala and Tamil Nadu especially from the Palakkad Iyer community. For preparing the Banana dosai you do not need any fermentation or grinding of the batter and the process of cooking too is very simple. These tiny pancakes are made of ripened bananas, rice flour, all purpose flour and little sugar and cardamom powder.
This pancake looks and tastes completely different from the normal savory dosa and can be prepared freshly on the same day. For preparing the Banana dosa, firstly peel the banana and put them in a mixing bowl. Mash the banana with the potato masher or with hand. To this add chopped raisins, cashew nuts, rice flour and all purpose flour (maida) and little sugar and mix all the ingredients well. Add cardamom powder and mix again.
The consistency of the batter should be thick and not like the regular dosa batter. It should be like the vada batter. Heat the tawa or griddle and put the batter as dumpling on the griddle and add ghee (clarified butter) over the dumpling to cook. Cook the dumplings over medium flame or else they would get burnt.
Flip and cook on the other side too till it turns to a nice golden in color. Remove and serve hot with nice spicy chutney. Banana dosa can be served with spicy tamarind chutney, mango or lemon or tomato chutney. Remember that the chutney should be really spicy to compensate the sweetness of banana and sugar.
Remember that you must prepare this dish with ghee as it enhances the flavors and gives a nice aroma in the whole house. Banana dish is an aromatic and luscious dessert that really makes one go crazy and kids would really pounce on them to eat. Take banana peel and mash banana in a bowl,rasins,almonda,rice flour,maida,sugar mix well and add cardaom powder mix again. can you grill or in pan, take a tsp and put as a small dumpling, cook in ever slow flame. Cook till the banana becomes brown in colour add little ghee.
