Bhakkervadi or Bhakarwadi is a very traditional Maharashtrian spicy snack dish which is usually enjoyed with hot sipping tea. It is flour based round disc snack stuffed with mashed potatoes and spices and deep fried to a crispy finish. Bhakarwadi is mainly a north Indian dish especially popular in the states of Maharashtra and Gujarat. The people of Pune usually love this crispy dish during the evening snack time. This is hot favorite among the Marathi people. It is a savory snack slightly spicy to taste. It is easy to prepare snack, delicious and especially made during festivals. This delightfully crisp, irresistible crunchy snack is made with wheat flour, gram flour, chili, cumin, coriander and other spices. Its unmatched flavor will add zest to your tea time, coffee breaks, after meal munches and parties. These are lovely looking small bite-sized rolls stuffed with a tasty spicy filling. You can make the filling of your own choice. Few people also used ingredients like dry coconut, red chilli powder, sev, sesame seeds and spices etc for stuffing the Bhakerwadi. It is very popular in Kolhapur and Pune cities and the taste is equally delicious here with a slight difference in the ingredients used for filling. Pune Bhakarwadi does not have coriander and garlic in the stuffing while Kolhapur bhakarwadi does have lots of coriander and garlic. Bhakkervadi is a ever favorite addictive snack which can taste either spicy, sweet, salty with a crunchy middle and crispy outer pastry crust. Its an ideal dish which could be served during parties, get-togethers or people of Gujarat carry such snacks during traveling in train as it is easy to carry and not messy. If prepared in the right way using dry spices then they could also stay for about a week. There are other popular snacks also like the Khakhra and Thepla which are usually used as snack foods during traveling. To prepare this delicious Bhakkervadi, wash and boil the potatoes. Once they get cooled, peel them and put them in a mixing bowl. Mash the potatoes well, add besan flour, freshly chopped green dhania (coriander leaves), little sugar, salt to taste, dhania (coriander) powder, chilli paste or powder, garlic and ginger paste and mix all these ingredients together properly. This is used for the filling the Bhakkerwadis. Keep the mixture aside. Next for the outer pastry, take maida (all purpose flour) and knead it to stiff dough with help of oil and water. Make three equal pieces of the dough prepared and roll them into one inch thick strip. Spread each of the strips with the above potato mixture and roll the strip like a swiss roll. Seal the edges with the help of water. Leave it apart without covering for at least fifteen minutes and then heat oil in a kadai or deep frying these Bhakarwadis. Put them in batches and fry them till they turn golden color on all sides and become crispy. Drain on a paper towel to soak up any extra oil. The yummy and delicious spicy Bhakkervadi is ready to eat. This can also be stored in airtight containers for about two weeks. Do try this recipe out as it is a very simple and easy to make recipe.
