Taco is a traditional Mexican dish consisting of a corn or wheat tortilla folded or rolled around a delicious filling. Generally, a taco is often accompanied by a variety of garnishes such as salsa, avocado or guacamole, cilantro, tomatoes, onions and lettuce.

Fresh salsa made with ripe tomatoes, chopped onion and garlic along with spices like herbs and lime (giving that citrus flavor) combined together will achieve the perfect balance of flavors. Mole sauce is the generic name for a number of sauces used in Mexican cuisine, as well as for dishes based on these sauces.

Mole poblano, often refers to a specific sauce outside Mexico. The popularity of the sauce, especially at major celebrations, is such that 99% of all Mexicans have tried at least one version of it. Puebla, Oaxaca and Tlaxcala, three states in Mexico claim to be the origin of mole. Chili peppers are the common and vital ingredient in any mole sauce which comes in various flavors and ingredients.

However, the classic version of the mole sauce is the variety called mole poblano which is dark red or brown sauce served over meat. This dish has become a culinary symbol of Mexico cuisine. The effort required to make a delicious mole sauce is definitely worth it for any tasty tacos. Mole poblano is the best known of all mole varieties and has been ranked as number one of typical Mexican dishes. It is also considered the national dish of Mexico.

Generally a mole poblano contains about  20 ingredients, including chili peppers and chocolate, which works to counteract the heat of the chili peppers, but it’s not a chocolate sauce per se, as it is just one of the many ingredients and does not dominate. It helps give the sauce its dark color, but this is also done by the mulato peppers, as well. This sauce is most often served over turkey at weddings, birthdays or at Christmas with rosemary over shrimp cakes.

To prepare Chicken taco with mole sauce, firstly whisk together mole and broth in a medium sized sauce pan and bring to a boil. Add the chicken pieces and simmer over medium-low heat for about 10 minutes. Keep sauce warm. Microwave tortillas wrapped in a clean kitchen towel for about 2 minutes until soft and pliable.

You can also place the wrapped tortillas in the top of a bamboo or metal steamer and allow steaming for 5 minutes. Arrange 4 tortillas on your work surface and keep the remaining tortillas covered. Fill each tortilla with 3 - 4 tablespoons of chicken. 

Roll the tortillas into long tight cylinders and transfer to a warmed platter. Repeat with the remaining tortillas and chicken. Spoon about 3/4 cup of the mole sauce atop the tacos. 

Garnish with the shredded cheese and cilantro and lime wedges.  Serve and pass additional mole sauce. Despite the list of ingredients and the time required, this recipe is excellent and pretty straight forward and easy.
