Chinese cuisine History of Chinese cuisine stretches about thousands of years back and has changed from period to period and in each region according to climate and local preferences. Over time, techniques and ingredients from the cuisines of other cultures were integrated into the cuisine of the Chinese people’s due both to imperial expansion and from the trade with nearby regions in pre-modern times as well as from Europe and the New World in the modern period. Styles and tastes also varied by class, region, and ethnic background.

This led to an unparalleled range of ingredients, techniques, dishes and eating styles in what could be called Chinese food, leading Chinese to pride themselves on eating a wide variety of foods while remaining true to the spirit and traditions of Chinese food culture. The Mandarin style of Chinese cooking was created almost 600 years ago. Sometimes called the food of the emperors, Mandarin cooking strives to achieve harmony through contrast, a sort of yin and yang approach to cooking that involves pairing crispy textures with smooth ones, sweet with sour, and contrasting colours and aromas.

This style of cuisine is a delight to the eyes as well as the palette. In this type of cooking, the style and flavours are intricately linked. Most dishes pair mild spices with colourful vegetables and combine with sweet & sour taste, crisp with smooth textures and enlivens with mixtures of colours and aromas. Chinese cooking encompasses thousands of sauces and condiments; their style is naturally a combination of influences from all the provinces.

Most sauces are readily available in the markets. The flavours of some of these sauces are strong while some are subtle. Ultimately they are all used to serve one purpose – to enhance the taste and tang of the dish. At the same time, it also adds a delightful individuality of its own. Honey & lemon sauce not only surprises you with a wonderful taste but is also a natural, nutrient-rich flavour that is added to hot tea or water.

Lemon pairs well with honey and works surprisingly well in savoury dishes. The sweet-sour sauce of lemon juice and honey coated, caramelised glaze on the crunchy florets with a bright garnish of sesame seeds over is refreshing and eye appealing to eyes and mouth-watering and luscious to the palate. It is an excellent contrast of flavours and colour.
