Ingredients used in DRUMSTICK LEAVES PODI
• Drumstick - 1 cup.
• Curry leaves - 1 springs.
• Ground nuts - half cup.
• Chana dal - 1 tea spoon.
• Urad dal - 1 tea spoon.
• Cumin seeds - half tea spoon.
• Dry red chilies - 5 no.
• Salt - to taste.
• Amchur powder - half tea spoon.
Method:
  • Heat pan, add drumstick, curry leaves and dry roast it.
  • Switch off flame and allow it rest.
  • In another pan add dry roast ground nuts.
  • To it add chana dal, urad dal, cumin seeds, dry red chilies and dry roast it.
  • Take a mixie jar, add dry roasted ingredients along with drumstick leaves, salt and blend into a coarse powder.
  • If required add amchur powder and mix it.

Now Drumstick Leaves Podi is ready to serve.

It is an awesome spice mix powder that is generally eaten mixed with hot steam cooked rice and sprinkled with little ghee. This is a must dish that all must try.

The drumstick leaves podi is an ultimate spice mix that is divine in taste with earthy flavors lingering around the palate. Southern India is popular in making a variety of spice mix podis such as paruppu podi, tengai podi or coconut powder, milagai podi, curry leaf powder, coriander leaves podi etc. They are generally eaten with delicious breakfast foods like idli, dosa, upma, vada etc or mixed with hot rice and ghee.

Drumstick is one of the common and popular tree that is grown in the backyard of most of the houses in Southern Indian, called as munagakaya. It is mainly valued for its medicinal values and high nutrition benefits that it provides. Drumstick leaves provides essential amount of iron and calcium. They are extensively used in Siddha medicine in India. Drumsticks are widely used in preparing a variety of dishes.

They are added into the sambar and is also fried. In other parts of India, especially West Bengal and Bangladesh, it is made into a variety of curry dishes by mixing with coconut, poppy seeds, and mustard or boiled until the drumsticks are semi-soft and consumed directly without any extra processing or cooking. It is used in curries, sambars, kormas, and dals, although it is also used to add flavor to cutlets, etc.

In Maharashtra, the pods are used in sweet & sour curries called Aamatee. Tender drumstick leaves, finely chopped, are used as garnish for vegetable dishes, dals, sambars, salads, etc. In some regions the flowers are gathered and cleansed to be cooked with besan to make pakoras. Drumstick leaves or Muranga Keerai is considered the ‘Queen of all Greens’ as it is valued for having the richest source of beta carotene among all green leafy vegetables.
