Ingredients used in Egg Baigan Bharta Mirza Ghassemi
• Garam masala - 1 teaspoons.
• Lime juice - 1 tablespoons.
• Eggs - 4 numbers.
• Tomato puree - 1 tablespoons.
• Pepper powder - 1/2 teaspoons.
• Chilly powder - 1 teaspoons.
• Turmeric powder - 1 pinch.
• Salt - 0 to taste.
• Onion(chopped) - 1 numbers.
• Garlic(chopped) - 1 teaspoons.
• Cumin seeds - 1/4 teaspoons.
• Olive oil - 1 tablespoons.
• Egg plant (baigan) - 1 big.
• Parsley chopped - 1 teaspoons.
Method:
  1. First roast the baigan on the stove top and let it cool down then remove the skin of the baigan and mash it and keep it aside.nbsp;
  2. Heat olive oil in a pan add cumin seeds, chopped garlic, add chopped onions, salt, turmeric, cook this till onions are soft, then add chilly powder, pepper powder, tomato puree and add mashed baigan, mix it well and pour the egg mixture on the top of the baigan bharta mix it well and add lime juice, garam masala powder, add chopped parsley and put the lid on and switch off the flame. Serve this with chapathi.

This dish is the Indian version that suits every Indian palate. Egg Baigan Bharta or Mirza Ghassemi is a popular Northern Iranian appetizer or main based dish having distinctive taste and flavours.

 

The dish is a pleasant mixture of aubergine seasoned with garlic, tomato, turmeric, olive oil, salt and pepper all amalgamated together with eggs. This is usually served with bread or rice. The flavors of garlic engulfing into the baigan lends an amazing taste.  In Indian cuisine, eggplant is prepared in many variations in different parts of the states with different spices depending on the local spices used.

 

Eggplant is very versatile and is cooked mixed with a variety of other foods. Make sure you pick out the right brinjal for making this dish or else the dish would turn out bad. Eggplant or Brinjal, is a very low calorie vegetable and has healthy nutrition profile; good news for weight watchers!  Eggplants should be firm and a bit heavy. Choose only those eggplants that have smooth and shiny skin.

 

The colour, no matter which color you purchase, should be very vivid. An eggplant that is discoloured or has scars and bruises is not a good choice. These blemishes may indicate that the flesh inside the eggplant is damaged or even decaying. Eggplant is very low in calories and fats but rich in soluble fiber content. It contains good amounts of many essential B-complex groups of vitamins such as vitamin B5, B6, B1,B3. Egg Baigan Bharta is a simple and delicious recipe which you can make for your lunch or special occasions. Do try preparing and enjoy the fantastic flavours.

 

Recipe of Egg Baigan Bharta Mirza Ghassemi:

Ingredients:

  1. Garam masala         -       1 tsp
  2. Lime juice                -       1 tbsp
  3. Eggs                           -       4 nos
  4. Tomato puree          -       1 tbsp
  5. Pepper powder         -       ½ tsp
  6. Chilli powder           -       1 tsp
  7. Turmeric                   -       pinch
  8. Salt                            -       to taste
  9. Onion, chopped      -       1 no
  10. Garlic, chopped      -       1 tsp
  11. Cumin seeds            -       ¼ tsp
  12. Olive oil                     -       1 tbsp
  13. Eggplant (baingan) -       1 big
  14. Parsley, chopped      -       1 tsp

Directions:

  1. Firstly roast the eggplant over the stove directly until it becomes soft.
  2. Remove, cool down and then remove the skin of the eggplant, mash and keep aside.
  3. Heat olive oil in a pan, add cumin seeds, chopped garlic, onions, salt, turmeric and cook till the onions are soft.
  4. Add chilli powder, pepper powder, tomato puree, mashed eggplant and mix well.
  5. Pour the egg mixture on the top of the baingan bharta and mix well.
  6. Add lime juice, garam masala powder, and parsley.
  7. Cover the pan with a lid and switch off the flame.
  8. Serve with chapatti, roti or rice.
