This chutney is prepared by combining mint, tomatoes, sesame seeds and other spices to make nice delicious chutney. This is normally a little thick chutney. The chutney has got a nice mint aroma along with the sweet and sourness of tomatoes and the nutty taste of the sesame seeds.

Sesame seeds may be the oldest condiment known to man dating back to as early as 1600 BC. Sesame seeds add a nutty taste and a delicate, almost invisible, crunch to many Asian dishes. They are also the main ingredients in tahini (sesame seed paste) and the wonderful Middle Eastern sweet call halvah. Sesame is grown primarily for its oil-rich seeds, which come in a variety of colors, from cream-white to charcoal-black.

Preparing the Mint tomato chutney is quite easy and simple. Take pan and dry roast the sesame seeds till nice aroma are released and keep it a side. In the same pan add oil, cumin seeds, garlic, red chillies, tamarind, salt and mix then add mint leaves (the mint leaves needs to dry nicely), chopped tomatoes, mix and cook till the tomatoes are soft. Let it cook for 5 min then remove from stove and transfer it to a blender as we need to make a paste. In the blender add sesame seeds, and cooked mint, tomatoes into it and blend till a fine paste. Chutney is ready. Do not add water if you want the chutney to stay for few days. If required you can also temper the chutney. Mint tomato chutney is best served with hot rice, naan, chapati or you can also spread the chutney on the bread slice and eat like a sandwich. Its truly a very delicious an aromatic chutney because of the mint and sesame seeds.

Sesame seeds are sometimes added to breads, including bagels and the tops of hamburger buns. Sesame seeds may be baked into crackers, often in the form of sticks. Sesame seeds are also sprinkled onto some sushi style foods. Whole seeds are found in many salads and baked snacks as well in Japan. Mint and sesame seeds are very nutritious and healthy. The seeds are exceptionally rich is iron, magnesium, copper and calcium. It also contains vitamin B1 and vitamin E. Among edible oils from six plants, sesame oil had the highest antioxidant content. Sesame seeds also contain phytosterols associated with reduced levels of blood cholesterol. The nutrients of sesame seeds are better absorbed if they are ground or pulverized before consumption, as in tahini.

The tomato fruit is consumed in diverse ways, including raw, as an ingredient in many dishes and sauces, and in drinks. While it is botanically a fruit, it is considered a vegetable for culinary purposes. The fruit is rich in lycopene, which may have beneficial health effects.

The tomato is now grown and eaten around the world. It is used in diverse ways, including raw in salads, and processed into ketchup or tomato soup. Tomatoes are acidic, making them especially easy to preserve in home canning whole, in pieces, as tomato sauce or paste. The fruit is also preserved by drying, often in the sun, and sold either in bags or in jars with oil. Tomato consumption has been associated with decreased risk of breast cancer, head and neck cancers and might be strongly protective against neurodegenerative diseases.

Recipe: Mint tomato Chutney

Summary: a simple chutney made with mint and tomatoes

Ingredients

  • cumin seed – 1/2 - tsp
  • garlic – 5 – number
  • MINT LEAVES – 5 – bunch
  • Oil – 2 – tbsp
  • red chillies dry – 3 – number
  • salt – 0 – as per taste
  • Seasame seeds dry roast – 2 – tbsp
  • tamarind – 0 – as per taste
  • TOMATOES – 5 – small

Instructions

  1. Take a pandry roast seasame seeds and keep it a side.
  2. in the same pan add oil, cumin seeds, garlic,red chillies,tamarind,salt and mix then add mint leaves, chopped tomatoes and mix well.
  3. let it cook for 5 min then remove from stove and transfer it to a blender as we need to make a paste.
  4. In the blender add seasame seeds,and cooked mint, tomatoes into it and blend till a find paste.
  5. chutney is ready
