Mughlai food is known for its richness. It is famous for the exotic use of spices, dried fruit and nuts. Mughlai Dishes have a distinct aroma and taste of ground and whole spices. Most Indian food connoisseurs love rich creamy aromatic and highly flavourful korma having distinctive taste of ground and whole spices as traditionally the chicken korma is indicative of the Moghul cooking of northern India which is marked by silken curries, butter dishes and delicate flavours. Dishes from the Mughlai cuisine can vary from extremely mild to spicy gravies but can be adjusted according to individual’s choice. Its taste, aroma and exotic flavours, that actually makes Mughlai food so special and sought after. Whether the dish is mildly or extremely spiced, there is no compromise in the aroma and taste. The speciality of this cuisine is the blend of spices and ingredients as each ingredient has its role of imparting its own aroma and taste into the dish that adds a distinctive taste and the cooking style. The ingredients (especially spices) are carefully cooked and added during cooking or towards the end of cooking so as to extract the most flavours out of them, and not lose any taste or aroma that has been extracted. Now it’s long that the Mughals are gone but their recipes last forever. After all good food is all about exotic aroma and taste which Mughlai foods have in abundance. This is a brilliant to enjoy exotic and flavourful foods in a healthy way.

I'd like to see something that's spicy, and doesn't have dairy products. We have a lot of Indian grocery stores here in Austin, really easy to find ingredients.?
